(Portsmouth - originally from Fife)
1 tsp Bicarbonate of soda
8 oz self raising flour
4 oz sugar
8 oz sultanas or mixed fruit
1 tsp mixed spice
4 oz margarine
1 cup of strong black tea
1 egg
Melt the margarine, tea and fruit in a large pot.
Simmer for 1 minute.
When the mixture has cooled, add all other
ingredients.
Put in a loaf tin and cook for 1 hour on 350c electric.
A little tip - I do the margarine, tea and fruit the night before.

Excited to try this! Here in Maryland, US. Just took this from the oven. Did this at 340 for 50 minutes. Used golden raisins & it looks & smells amazing. Too hot to try just yet but I'm sure it will be great.

My hubby is diabetic, so I leave the sugar out, the mixed fruit has enough sugar in it so you don't need to add any more sugar, and its a lot tastier too

This is one good old cake you cannot go wrong with, the only thing that is missing here is that you add the fruit to the tea and leave it soaking overnight

350c sounds wrong. Should be 170c for about 1hr 20mins.

Now, my Mum introduced me to this. I am from Cornwall. Anyway, I brought the cake away from Cornwall at Christmas and my Mum had made one for my brother.A friend of ours really dislikestea and is a keen chef and baker.
We offered him some and called it a fruit cake. He loved it. Couldn't believe it that it was made with a cup of tea.
You just cannot go wrong with the 'Cup a tea cake'

I found this receipe on the internet and what a steal! I originally made it for my husband whose nan use to make him it as a child and she lost her receipe! So I decided to try and make him one to cheer him up... He loved it. He then took some for his mum to try and she loved it too. His nan loves it so much I am making her one today. It has a great taste and is so moist. Can highly recommend this receipe!

Sam, a cup is just that, a cup. A mug you'd drink coffee from. There's never been a set amount.

My sister has been making this for many years and has lost her original recipe. She made one the weekend and it was not to her liking and she wasn't sure if an egg that she added was not required so she ask me to find a recipe and as noted, an egg was required. She was wondering if the reason might have been the flour,do you have any thouhts on this matter. Thanks

In UK - you buy 'mixed spice' ready made - but I think it is the same as Allspice in USA. You don't say where you're from - but hopefully you will be able to get something similar. I think it has nutmeg and ginger as well as cinnamon in it.

I remember I used to make this a lot, one of my pals gave me the recipe not long after I was married (over 30 yrs ago) and it was a great quick way of making something that tastes and smells lovely. I almost thought I'd made it as a housewife - being able to bake and all!!! I haven't made it in years so will have to rattle up one. Only thing is I'd probably eat most of it myself as I cannot resist it - especially when it's still warm. I know you're meant to wait on it cooling but mmmm...! Post festivities I guess I'd maybe better not make it this week or it will add to the extra tight jeans! Maybe we'll have some visitors next weekend who will help me eat it and save me from too much indulgence!

This recipe sounds easy to make (and quick). If you're making it again - maybe send me a photograph, as it looks such an easy recipe, but not common. Others might like to see what it looks like.
